The Rice for paella

The Rice for Paella is the must important ingredient in this dish.
No matter what else you put in to the Paella, if you use the wrong rice, it will not be, or taste like Paella.

The world has hundreds of varieties of rice, each one suited for a particular use.
For example, Basmati rice from India is the perfect base for curry.
It makes sense use Spanish rice, when you rice for an authentic Spanish recipe.
The rice should be medium grain, preferably Spanish rice, the best for Paella is bomba .

Long-grain rice should never be used in paella, no matter how much you are tempted to use it.
This is a mistake made world wide by people that try and make this dish when they arrive back from Spain.

The Paella Pan

Using a paella pan is the best way to make it, the pan is made specifically for the purpose of cooking paella and does the job best.

We suggest that if you are only getting one pan,
that you get a 15in/38cm pan, which serves 6 to 8 people.
This pan can then be used for small portions for yourself,
( which will probably never happen, because you will always be asked,
" can I have a taste ?")
and can make enough paella for up to 8 people.

If you really want to try to make Paella, without the proper pan, you need a pan that is wide, round and shallow, it does not need a lid.


Most chefs say that the key to the perfect result is to maximize the amount of rice touching the bottom of the pan, because that's where the flavor is.
It is for this reason that paella pans grow in diameter rather than height.


The Heat Source is very important and should ideally be able to accommodate the whole base of the paella pan for even cooking.

The Sofrito for paella.

The Sofrito or sauté, provides the flavor base for this Paella recipe. The ingredients of the sofrito vary by region, tomato, onion, and garlic are a popular combination.


The Cooking Liquid should be made from homemade stock, but you can also use water and almost every paella recipe calls for saffron to be added.
